banana muffins for toddlers

i grabbed and modifed this recipe from a sweet little website called Blue Bird Kisses.  they turned out light and fluffy and perfect for my little guy and his little friends.

3 ripe bananas

1 egg

1/2 cup of melted butter

1 lemon (zest & juice)

1/4 cup of brown sugar

1/2 cup of finely ground walnuts OR oats {fine powder}

1 & 1/2 cups of flour

1 tsp baking soda

pinch of salt

1 Tbs pure vanilla extract

1.  preheat oven to 375 degrees and line/butter 2 muffin trays.

2.  mash ripe bananas in a bowl, add melted butter, lemon zest & juice and stir.

3.  add in egg and vanilla, and stir until well blended.

4.  add sugar, flour and walnut or oat grounds and mix.

5.  drop spoonfuls into the lined/buttered muffin tins and bake for 15 minutes or until golden brown and a toothpick inserted in the middle comes out clean.
